
The Cuculo
The Cuculo (“cuckoo”) is a biscuit, found mainly in the lower province of Siena, that relieved the hunger of tired agricultural workers. Its name is really due to the bird with the characteristic call: the biscuit was in fact almost exclusively used as the reapers’ afternoon snack, when the sultry heat of July decreased and the cuckoo began to emit its typical sound. The ingredients for making it are: eggs, extra virgin olive oil, milk, sugar and grated lemon rind.
